Cynthia Wong of Life Raft Treats in Charleston has made her mark on the Southern food scene by merging her serious pastry skills with a sense of whimsy. Take her Not Fried Chicken drumstick-shaped frozen desserts: brown butter waffle cone ice cream covered with Valrhona dulcey chocolate, cornflakes, and waffle cone bits with a chocolate cookie bone in the center. She calls it “weaponized mouth joy,” and everyone else calls it delicious. Cynthia studied in France and spent time in London kitchens before winning serious industry accolades for her work at Empire State South in Atlanta, Rhubarb in Asheville, North Carolina, and Butcher & Bee in Charleston and Nashville.
