Ellen Bennett of Hedley & Bennett is one of the most effervescent and hard-working people in the restaurant industry. She came up with the idea for a modern apron company while working as a line cook at Bäco Mercat and the two-Michelin-starred Providence in Los Angeles. The drab, essentially disposable aprons that served as their uniforms needed a major upgrade, so she launched an apron company and never looked back. Today, Hedley & Bennett crafts America-made chefswear out of its factory outside Los Angeles and Ellen has built her devoted #ApronSquad one chef at a time. Hedley & Bennett has collaborated with a number of brands, including Vans and Rifle Paper, and the company headquarters now includes a test kitchen and event space.
