A California native and founder of the wildly influential eatery known as Sqirl, Chef Jessica Koslow spent much of her youth as a competitive figure skater. She later discovered some new loves: her home state’s incredible bounty and the art of preserving. Though Sqirl originally focused on marmalades and jams—with delightful and unexpected combinations like raspberry cardamom and fig with red wine—Jessica’s breakfast-all-day, line-around-the-block cafe is now at the center of the ingredient-driven, wellness-minded trend that has helped put the Los Angeles dining scene on the map. Jessica is also the author of the cookbook Everything I Want to Eat, which features many of the recipes that continue to make Sqirl a must-stop on any L.A. food tour.
