Katrina Markoff changed the way Americans think about chocolate when she launched Vosges Haut-Chocolat. Three days after graduating with her degree in Chemistry from Vanderbilt University, Katrina headed to Paris to attend culinary school at Le Cordon Bleu. When she returned to the U.S., she noticed the chocolate industry lacked creativity and nuance—and set out to change that with her innovative line of truffles. Today, Vosge’s mission is to allow consumers to travel the world through chocolate, a concept achieved via Katrina’s inventive infusions of international spices, flowers, roots, herbs, and liqueurs. In 2013, Katrina launched Wild Ophelia, a fair trade chocolate line that she calls the spirited younger sister of Vosges Haut-Chocolat. A portion of Wild Ophelia’s sales support a fund to encourage young women in high school and college who dream of being food entrepreneurs.
