Lani Halliday is the creative baker behind Brooklyn’s Brutus Bakeshop. She has made a name for herself with her delicious, colorful, gluten-free creations–including her fabulous snake cakes. She has contributed her time and talent to organizations such as Queer Soup Night, the roving fundraising event. Currently, she is at work on a new concept, Dominga Brooklyn, set to debut next year, and she is helping the small businesses impacted by the closing of the Pilotworks incubator program find new workspaces and resources. For me, becoming a pastry chef in my mid-30’s is a second act — but not in the conventional sense,” Lani wrote in TueNight. “I always have and will likely only ever work in the food and service industry. It’s my first true love.”
