Nong Poonsukwattana left Bangkok and moved to Portland, Oregon, in 2003 with $70 and two suitcases. She worked in local restaurants and opened a food cart in 2009 called Nong’s Khao Man Gai. The sole offering was the namesake dish—chicken and rice garnished with cilantro and cucumber and served with a side of broth. Nong now has two locations and a catering company, and her Khao Man Gai sauce can be found in local supermarkets. At a Cherry Bombe event earlier this year, Nong, a new mom, said her hope for the future is to make a decent living and save enough to retire by feeding good affordable food to the people of Portland.
