Here’s everything you need to make Caroline’s rugelach at home

Kerrygold Unsalted Pure Irish Butter (226 grams/2 sticks)
Cream cheese (192 grams)
Sugar (83 grams)
Vanilla extract (1 teaspoon)
Kosher salt (½ teaspoon)

Caroline Schiff

Widely known under the moniker @pastryschiff, Caroline is a celebrated pastry chef and culinary consultant based in Brooklyn. She got her start in the restaurant industry a decade ago cooking at The Good Fork, and worked her way up through a number of acclaimed restaurants and bakeries including Mas (la Grillade), Maysville NYC, Kenton's NOLA, and Greene Grape Provisions before coming full circle to work with mentor Sohui Kim once again as the Pastry Chef at Gage & Tollner. She is also the Head Chef and recipe developer for Slow Up; the first fresh food bar and currently showcases her baked goods at the Fort Defiance General Store in Red Hook, Brooklyn. Caroline’s signature gravity-defying hairdo is outsized only by her enormous heart; in her spare time you can find her either supporting charitable causes or running a marathon.

Lauren Goldstein

Lauren Paige Goldstein the founder of the Sugar and Spice Summit, the only conference connecting college women to influential women working in the food industry, and Cherry Bombe's former Special Projects + Social Media Director. She also writes a (mostly) weekly newsletter called Mandatory Fun. Her favorite foods are ice cream and matzo ball soup, and she's never met a stranger’s dog she didn’t like.
