Chef Jess Shadbolt is part of the celebrated trio behind King and Jupiter restaurants in New York City. She and her two business partners, Chef Clare de Boer and front of house/wine pro Annie Shi, met in London then moved to New York with big dreams about opening their own place with a daily-changing menu and a kitchen that relies on intuition instead of recipes. Jess joins host Kerry Diamond to talk about their restaurants, her approach to intuitive cooking, and her time at the River Cafe London with the legendary chefs Ruthie Rogers and Rose Gray and at the Ballymaloe cookery school in Ireland with the equally legendary Darina Allen.
