Chocolate Mayonnaise Cake From Susan Bae

INGREDIENTS

 
 
1,420 grams buttermilk
 
1,362 grams cold brew
 
13 grams vanilla
 
1,500 grams all-purpose flour
 
400 grams cocoa powder
 
58 grams baking powder
 
54 grams baking soda
 
30 grams fine salt
 
2,400 grams granulated sugar
 
12 grams eggs
 
1,008 grams mayonnaise
 
60 grams vegetable oil
 
 
 

METHOD

Preheat the oven to 350°F. Line a cake pan or a half-sheet pan with greased parchment paper.

In a bowl, combine the buttermilk, cold brew, and vanilla. Set aside.

In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In the bowl of an electric mixer, whisk the sugar and eggs on medium until the mixture is lightly pale in color. Then, whisk in the vegetable oil until fully incorporated.

Whisk one-third of the dry ingredients into the sugar-egg mixture, then add one-third of the wet ingredients into the bowl. Repeat this step two more times until all dry and wet ingredients are incorporated into the batter.

Next, whisk the mayonnaise into the batter on low speed just until it’s incorporated. Pour the batter into the prepared pan and bake for 20 to 30 minutes.

Let the cake cool before removing from the pan.
