It's been over two weeks since we made a fruitcake with food blogger Megan Keno of Country Cleaver during our Friendsgiving event, and now it's time for the big reveal! Cherry Bombe's Donna Yen will join Megan for this follow-up demo of how to make a brandy sauce and frosting for a fruitcake after it's aged.

California Prunes (1 cup)
Golden Raisins (1 cup)
Zante Dried Currants (1 cup)
Other Dried Fruits, such as Apples and Apricots (1½ cups)
Bottle of Brandy
Eggs (3)
Shredded Zucchini (enough for 2 cups)
Vegetable Oil (1 cup)
Vanilla Extract (1 tablespoon)
Brown Sugar (2 cups)
AP Flour (3 cups)
Baking Soda (2 teaspoons)
Baking Powder (½ teaspoon)
Salt (1 teaspoon)
Cinnamon (1 tablespoon)
Ground Allspice (2 teaspoons)
Nutmeg (1 teaspoon)
Cloves(1 teaspoon)
Pecans (¾ cup, chopped)
Walnuts (¾ cup, chopped)
Cheesecloth
Foil

2 Loaf Pans
1 or 2 Quart Jars
1 Large Mixing Bowl

Marinate your California Prunes and other dried fruits in brandy (you can also soak a week ahead if desired!)

MEGAN KENO
Megan Keno is a professional recipe developer, cookbook author, food photographer, and founder of Country Cleaver, a food blog celebrating the wonders of country living on a small suburban scale. Her cookbook Cast Iron Gourmet was published in 2017, celebrating her affinity for cast iron cooking, and demystifying it for new age cooks. Megan’s work has been published online, in various print media, and on The Pioneer Woman’s website Tasty Kitchen, where she was a contributing writer, and Simply Recipes, where her recipes are showcased regularly. When Megan is not in the kitchen, she works full time as a project manager for large aviation construction projects, and spends time with her husband Ben, two young sons, their dog Huckleberry, and the newly added chickens… that her husband reluctantly tolerates.
