Kimmie Mcintosh is the chef and co-owner of MILKFISH Bakeshop. She spent much of her cooking and baking career in Santa Barbara, CA, where she graduated from culinary school, before transitioning to the front-of-house. She worked her way up to managing restaurants in the San Francisco Bay Area, before moving to Las Vegas at the end of 2013, where she served at various restaurants on the Strip.
When the pandemic hit, she decided to take a step back from restaurants. She and her husband Josh hosted their first virtual bake sale with Bakers Against Racism, a baking collective which raises money for nonprofit organizations that address racial and social injustice. Over the next two years, they continued to host these bake sales, donating all net proceeds to various, local nonprofit organizations. They evolved the bake sales into a collaborative effort with other local bakers. To date, MILKFISH Bakeshop has raised over $17,000.
In 2022, they received an incredible opportunity to test out their Filipino-inspired bakeshop concept at the now-shuttered Vegas Test Kitchen in Downtown Las Vegas. Kimmie loves to create her Filipino bakes as a way of staying connected to her heritage, sharing it with others, and learning more about the history of Filipino cuisine and culture.
Over the next few years, and currently, they continue to host pop-ups in different areas around town and participate in local food events such as Picnic in the Alley and Asian Night Market. They also began hosting their own community events such as The Looban (loh-oh-bahn), a mini pop-up market featuring local, Filipino-owned small businesses.
In 2024, Kimmie and Josh were nominated as James Beard semifinalists for Outstanding Pastry Chef and Baker. When she is not baking, Kimmie loves to work out and spend time with her family, especially her either-year old daughter, Leia, and five-year old son, Cooper.
