Meet Our Keynote Speaker: Dominique Crenn

We’re excited to share that Chef Dominique Crenn is the keynote speaker at Jubilee Wine Country! Dominique is one of the most talented and fascinating folks in the food world. Named to this year’s TIME 100, she’s an environmentalist, philanthropist, cancer survivor, author, and humanitarian. She is also the celebrated chef behind Atelier Crenn, Bar Crenn, and Petit Crenn in San Francisco and the regenerative Bleu Belle Farm in Sonoma County. As the Master Mixologist, North America, for Wynn Resorts, Mariena Mercer Boarini oversees a vast number of beverage programs. Based at Wynn and Encore Las Vegas, she curates robust menus for 16 restaurants, 13 bars, and 11 additional programs—from café and pool menus to those for the spa and fitness centers, banquets, and more. Mariena creates a distinct yet varied perspective for each, ensuring that every beverage program is reflective of the restaurant's culinary menu and atmosphere. She works with more than 200 bartenders and is responsible for 340 beverage recipes across the resort.
 
Mariena began experimenting with molecular mixology in 2007, after creating an at-home kitchen dedicated to research and experimentation. A native Las Vegan, she is a hospitality industry veteran and widely recognized as one of the top mixologists on the Strip. She took home the global title at The Opihr World Adventure Cocktail Competition in Morocco in 2015, in addition to being named “Bartender of the Year” by Eater and one of the “Top 10 Female Bartenders in the World” by The Drinks Business.
 
Fueled by the belief that magic is all around us, Mariena is passionate about incorporating unique flavors and global inspiration into the glass. She is also the founder, president, and creative director of Wanderlush, a cocktail consulting and branding agency, as well as Electricdust™, a revolutionary flavor and sensation enhancement that engages the senses as you drink.
 
She resides in Las Vegas with her husband and young sons. When she isn’t working, she is cooking, hiking, camping, and coloring outside of the lines.
