Stovetop Granola From Caroline Chambers

She loves to get her kids involved in the cooking process, because she knows they'll be more apt to eat it. INGREDIENTS
METHOD
In your largest skillet over medium heat, toast the chopped nuts until lightly browned. (Please note: If you have smaller seeds like chia or flax add when you add the oats, and not with the nuts.)
Add the oats and continue toasting everything, stirring often, until the nuts and oats are golden brown.
Then, add the butter, brown sugar, sea salt, and whatever warming spices you're into (I just do cinnamon for the kids). Stir until the butter is totally absorbed and the oats don't look wet, another 4 minutes or so. Taste. Is it sweet enough? Add more sugar if needed! Turn off the heat.
Stir the dried fruit into the granola.
Let it cool completely, then serve. Store in an airtight container at room temperature for 2 weeks, or in the freezer for several months. (I sprinkle the granola on my yogurt and it thaws within a minute or two.)
