Laura O'Neill co-founded Van Leeuwen Ice Cream in 2008 alongside brothers Ben and Pete Van Leeuwen. After discovering a gap in the market for ice cream trucks scooping good ice cream, made with good ingredients, the trio set out to create their own recipes in the kitchen of their shared Greenpoint, Brooklyn apartment. In the Spring of 2008 they began selling their ice cream out of a yellow ice cream truck. Their French-style ice cream (made with more than double the amount of egg yolks as standard ice cream) quickly gained a loyal following; today Van Leeuwen has nearly 100 scoop shops across the country, and its ice cream is available in grocery stores nationwide.

Born and raised in Melbourne, Australia, Laura moved to NYC in 2007. She melded together her experience in event production and her passion for good food and design to build Van Leeuwen from its inception to its current cult status. Laura oversees brand growth, marketing, and the overall creative direction of the brand.

Laura was featured on the cover of Inc. Magazine and has been recognized on Inc's Female Founders 250 list. She has been profiled in outlets such as Fast Company, The Today Show, Cherry Bombe, Forbes and The Australian Financial Review. Laura is also the co-author of The Van Leeuwen Artisan Ice Cream cookbook (2015 Ecco/Harper Collins).

Laura splits her time between New York City and Los Angeles, where she lives with her partner, their daughter and cat.
