HERE’S EVERYTHING YOU’LL NEED TO MAKE Zoë’s baked Alaska at home
Unsalted Kerrygold butter (8 tablespoons/112 grams)
1 batch coffee-flavored ice cream (or any flavor you desire)
Granulated sugar (4 cups/800grams)
2 eggs
2 egg yolks
All-purpose flour (1 cup/120 grams)
Dutch-processed cocoa powder (⅓ cup, plus 2 tablespoons/30 grams)
Baking powder
Baking soda
Kosher salt
Whole milk (¼ cup/60 milliliters)
Sour cream (¼ cup/60 grams)
Egg whites (1½ cups / 360 milliliters from about 7 eggs)
Vanilla extract
Special equipment to assemble the Baked Alaska
½ cup silicone hemisphere molds or ice cream scoop
3-inch circle cutter

Zoë François
Zoë François is the co-author of the acclaimed Artisan Bread in Five Minutes a Day cookbook series. Her newest book Zoë Bakes Cakes just came out with Ten Speed Press. Zoë is also the host of Zoë Bakes on the Magnolia Network. She was formally trained as a pastry chef at the Culinary Institute of America in New York. Since then she has been the executive pastry chef at several Twin Cities’ restaurants, working with nationally recognized chefs, including Andrew Zimmern. Zoë's portfolio of work can be found on her award-winning Instagram account @zoebakes.
