We’re delighted to share the covers of our new Italy Issue: Nancy Silverton and Missy Robbins! These two chefs have, from opposing coasts, been steadily shaping the American perception of Italian cuisine for decades—from their perpetually busy restaurants, where clamoring for a table is a New York and L.A. rite of passage, to their cookbooks, which let us all try our hand at recreating Missy’s mafaldine with pink peppercorns or Nancy’s orecchiette with sausage and Swiss chard from our own kitchens.

 

The two share a passion for Italian food and a steady drive, not unlike the many incredibly talented women—from pastry chefs to cookbook authors to culinary tour leaders to bread gurus—who grace the pages of this Italy Issue. You’ll find undersung wines and women-made olive oils, food-filled travelogues and odes to Italian culinary classics, and, obviously, pasta, pasta, and more pasta.
 
We hope that this issue serves as an invitation for your mind and palate to travel, whether or not you actually book that trip to Italy.
