Nadine Ghantous is the sous-chef at Rolo’s, a popular neighborhood restaurant in Ridgewood, Queens. After completing a biology degree at Syracuse University, she moved to New York City and pivoted to restaurants, where she found herself hosting at one of New York’s hottest restaurants, Lillia.As she learned about the delicate dance required to run a successful restaurant, she started to dream about a career in the kitchen. Today, Nadine is working the line—and the wood-fired oven—at Rolo’s, one of the most buzzed-about restaurants in Queens.
